Update 2020
Visited this place for Lunar New Year Lunch (dinner is fully booked and we can’t get a table)
Desserts are much improved
Coffee/Tea station has a water (alkaline) station beside it.
Service is still fast and staff are friendly.

I have a colleague who insists that the best buffet here in Singapore is either Todai or Carousel.
Personally, I love Todai’s selection (they also provide unlimited drinks) but the crowd is a bit noisy and you’ll need to queue for some sections (during my last visit Brazilian, Roasted and Dessert sections).
This is however not about Todai, it’s about Carousel which is located at Royal Plaza on Scotts, 25 Scotts Road, Singapore 228220
Carousel is a less noisy (compared to Todai) and the space is excellent.
We had various nationalities in our group (Chinese, Japanese, Indian, Malaysian and Filipino) and everyone found a section they kept coming back to.
Carousel (as per their website) offers Mediterranean, Asian, Japanese, Seafood, French Rotisserie, desserts.
You’ll definitely go back for their Rotisserie, Seafood and Desserts!
Only issue I have is that you’ll have to purchase your beverage separately, but maybe, having just a can of soda made me eat (and enjoy) more…
(check their promotions and make reservations before going there)

I went back with my family for Monday lunch and compared to my first visit which was a Friday dinner, lunch did not have oysters, lobsters, paella and roasted meat (there may be other stuff missing).
Also found out that they have free flowing coffee and tea.
Service was way better than our first visit (maybe it was just the person assigned to our area).
Lunch is (strictly) available until 2pm only.
